You all know I love an easy crockpot meal that makes life just a little bit easier. Today we finally have a bit of Spring weather in Spokane! I want to now spend all my time doing everything but cooking.
The spring cleaning bug has hit me hard! My poor husband is pretty sure that all I want to do is cleaning projects which is not far from the truth. We have been in this house now over a year and I am realizing that I unpacked by stuffing things into closets in hopes of emptying boxes but I never really organized anything.
Commence deep clean and after watching the Marie Kondo show on Netflix = getting rid of all the things.

Ingredients needed to make Taco Soup in the Crockpot
- Lean ground beef
- Onion
- Diced tomatoes with green chilies, we used Ro-Tel
- Crushed tomatoes
- Frozen whole kernel corn
- Black beans
- Chili powder
- Ground cumin
- Salt
- Pepper
Garnish - sour cream, cilantro
Equipment needed
Mix n Chop - We use the mix n chop to break up the ground beef and love it.
Vegetable chopper - This is a huge time saver for chopping veggies.
Crockpot - We suggest using a crockpot that has a digital timer that automatically switches the slow cooker to warm after a set amount of time. This helps make sure your dinner cooks perfectly and you don't have to stress about what time it is going to be done.

Ingredients
- 2 lbs Ground Beef lean
- 1 Onion chopped
- 20 oz RO-TEL Diced Tomatoes & Green Chilies we used Ro-Tel
- 14.5 oz Crushed Tomatoes
- 1 ½ cups frozen whole kernel corn thawed
- 15 oz Black Beans drained and rinsed
- 1 Tablespoon Chili Powder
- 1 teaspoon ground cumin
- ½ teaspoon Salt
- ½ teaspoon Black Pepper
- Garnish – sour cream cilantro
US Customary - Metric
Instructions
Brown ground beef and onions in a large skillet, drain and spoon into 5-7 quart crock pot
Add in diced tomatoes, crushed tomatoes, corn, black beans, chili powder, cumin, salt and pepper
Cook on low for 4-6 hours
Garnish with sour cream and cilantro

I'm not exactly sure what happened, but I think that maybe I left it on for too long. I heard a pop and a small BANG and then there was smoke coming out of the back . . . took that bad boy, unplugged it and threw it out in a huge pile of snow!I am definitely lost without my crockpot. I rely on it so much during the winter. 🙁 So, I'm reviewing a bunch of blog posts about a couple that I've seen and I'm hoping I'll have made up my mind by this weekend.

oh my! That had to be a bit scary! I had a microwave go out this year and start smoking. The smell is so horrible. Especially in the winter when you want to open a window but it is so cold. I really like our crock pot. I have had it for a few years. I am thinking of upgrading to a giant one with lots of options but can't decide on which one to get.
