Ingredients

  • 2 eggs separated
  • 2 Tablespoons cream cheese softened
  • ¼ teaspoon baking powder
  • pinch of salt
  • ¼ teaspoon parmesan cheese shredded

Instructions

  • Preheat oven to 300°F. Line a baking tray with parchment paper.

  • Mix cream cheese with a hand blender until smooth. Mix in egg yolks until incorporated.

  • In a separate bowl beat egg whites, baking powder, and salt until stiff peaks form.

  • Fold the egg whites mixture and parmesan cheese gently into the egg yolk mixture, making sure to not over mix it.

  • Scoop onto the prepared baking sheet in 3-4 inch circles.

  • Bake for 17-20 minutes or until they are golden brown.

Notes

  • Large eggs are recommended for this recipe. Be sure to beat egg whites until very stiff peaks form for best results.
  • Bring cream cheese come to room temperature, or microwave for 20 seconds for easier blending.
  • Make sure baking powder is still fresh, or cloud bread may not rise properly.

  • Store cooled cloud bread slices in a sealed container at room temperature for 2-3 days.
  • Freeze cloud bread in a sealed container for up to a month.
